Q- What's the best way to store root vegetables like carrots over winter?

James Strawbridge replies: I like to make a clamp to keep root crops fresh over the cold months.

Pick and leave your
carrot or root vegetable crop to dry for a couple of hours and then lay them on top of a layer of straw or bracken. Arrange them into a pyramid shape and then cover with straw.

Then leave them to
sweat for an hour or two and cover with six inches of earth. Allow some straw to poke through the soil and enable air flow to the crop. Pat the sides flat with a spade so that they are steep and rain can run off easily.
